Mrs. Ashby’s Southern Pimento Cheese Spread

Mom made sure she always had a quick sandwich or snack on hand for us, or friends, that might come by for a visit on the porch.

Her pimento cheese was always a nice cool bite spread between a folded slice of light bread, with a couple of pickle slices or red onion wedged in there for a lil crunch! Always went down with a nice glass of sweet iced tea or lemonade! Thanks Mama Carole!!!

Mrs. Ashby’s Southern Pimento Cheese Spread

32 oz Velveeta cheese

3/4 cup mayonnaise

4 oz diced pimento cheese

3 T white sugar

1 tsp sea salt or table salt

Tools you will need – large mixing bowl, measuring cup, spoon measures, rubber spatula……and of course A Fork!!!

  1. Take the cheese out of the box, and leave in the foil. Set out until soft to the squeeze of the hand.
  2. Once soft, unwrap the cheese log and put in a large mixing bowl. Add the mayo, pimentos, sugar and salt on top of the cheese.
  3. Mash those ingredients into the cheese, with your fork, until the consistency is that of smooth cottage cheese. Once you’ve reached the consistency, take your rubber spatula and fold the pimento cheese into itself in the bowl 22 times…not 23 or 24….22.
  4. Store the mixture in the fridge for a few hours until it’s set up and cold, It will last in a tight lid bowl for 5 days, but I’ve never seen it last that long in my house!!!
